Walnut and Apple Salad

Ingredients:

  • 2 apples (preferably Fuji or Honeycrisp), cored and sliced
  • 1/2 cup walnuts, coarsely chopped
  • 1/4 cup dried cranberries
  • 2 tablespoons honey
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • A handful of fresh arugula or spinach leaves (optional)

Steps:

  • In a small bowl, whisk together the honey, lemon juice, olive oil, salt, and pepper to make the dressing.
  • In a large salad bowl, combine the apple slices, walnuts, dried cranberries, and if using, the arugula or spinach leaves.
  • Pour the dressing over the salad and toss gently to coat evenly.

Walnut Crusted Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup walnuts, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for frying

Steps:

  • Season the chicken breasts with salt, pepper, garlic powder, and paprika.
  • In a shallow dish, combine the chopped walnuts, breadcrumbs, and Parmesan cheese.
  • Dip each chicken breast into the beaten eggs, then coat thoroughly with the walnut mixture.
  • Heat olive oil in a large skillet over medium heat.
  • Place the coated chicken breasts in the skillet and cook for about 6 - 8 minutes per side, or until golden brown and cooked through.

Walnut Brownies

Ingredients:

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup walnuts, chopped
  • 1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking pan.
  • Melt the butter in a saucepan over low heat. Remove from the heat and stir in the sugar.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture and stir until just combined.
  • Fold in the chopped walnuts.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for about 25 - 30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let cool before cutting into squares.
