Walnut and Apple Salad
Ingredients:
- 2 apples (preferably Fuji or Honeycrisp), cored and sliced
- 1/2 cup walnuts, coarsely chopped
- 1/4 cup dried cranberries
- 2 tablespoons honey
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- Salt and pepper to taste
- A handful of fresh arugula or spinach leaves (optional)
Steps:
- In a small bowl, whisk together the honey, lemon juice, olive oil, salt, and pepper to make the dressing.
- In a large salad bowl, combine the apple slices, walnuts, dried cranberries, and if using, the arugula or spinach leaves.
- Pour the dressing over the salad and toss gently to coat evenly.


Walnut Crusted Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup walnuts, finely chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil for frying
Steps:
- Season the chicken breasts with salt, pepper, garlic powder, and paprika.
- In a shallow dish, combine the chopped walnuts, breadcrumbs, and Parmesan cheese.
- Dip each chicken breast into the beaten eggs, then coat thoroughly with the walnut mixture.
- Heat olive oil in a large skillet over medium heat.
- Place the coated chicken breasts in the skillet and cook for about 6 - 8 minutes per side, or until golden brown and cooked through.
Walnut Brownies
Ingredients:
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 eggs
- 1/2 cup all-purpose flour
- 1/3 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup walnuts, chopped
- 1 teaspoon vanilla extract
Steps:
- Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking pan.
- Melt the butter in a saucepan over low heat. Remove from the heat and stir in the sugar.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Fold in the chopped walnuts.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for about 25 - 30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let cool before cutting into squares.
