Yunnan is situated on the Yunnan-Guizhou Plateau, with 94% of the province's area comprising mountains. The terrain is elevated in the northwest and low in the southeast. The three-dimensional climate, shaped by the elevation differences, provides ample sunshine and abundant rainfall. The region experiences mild, humid conditions, with no extreme cold in winter or scorching heat in summer. Late frosts are not a concern, making the climate ideal for the cultivation of deep-grained walnuts.
The Yunnan alpine deep grain walnut is cultivated in the natural conditions of 2100~3500 meters above sea level in the original ecological alpine forest, located in the latitude of 26 ° north of the golden latitude band. The climate is characterised by year-round cloud cover, which contributes to the accumulation of rich nutrients in the deep grain walnut, resulting in a naturally sweet and flavourful product.
It is not possible to manage Alpine pecan trees by hand. The trees are able to flourish in the mountainous region, which receives over 2,800 hours of sunshine per year. They are nourished by mountain springs and gravel soil, and are naturally slow-growing and ripening under natural conditions. There is no need for chemical fertilisers, pesticides or herbicides.
Every year in September, the deep grain walnuts of Yunnan reach their optimal harvesting stage. Fruit farmers must monitor the weather, seize the opportunity, and navigate steep slopes to reach the walnut trees, which are typically eight or nine meters high, to knock down the fruit. This is done to ensure the walnuts are harvested at their peak state.
The first step in processing freshly picked walnuts is to de-green them. This is done partly to initially sift out the black-spotted, incomplete fruit and partly to reduce weight so that more walnuts can be harvested.
