Yunnan is a significant contributor to China's walnut production, with its distinctive geographical and climatic conditions fostering an optimal environment for walnut growth. Yunnan is a vast area, comprising a variety of terrains, including mountains, hills and river valleys. The majority of the regions enjoy a temperate climate, ample sunshine, abundant precipitation and fertile soil, which collectively result in the production of premium-quality Yunnan walnuts.
Yunnan walnut varieties are diverse, comprising both traditional local varieties, such as the Yangbi walnut and the Dayao Santai walnut, as well as improved varieties that have been introduced and localised. While different varieties exhibit distinctive characteristics, including fruit size, shell thickness, and kernel taste, they all exemplify the distinctive quality of Yunnan walnuts.
The fruit is characterised by a distinctive shape and size. Yunnan walnuts exhibit a range of fruit shapes, including nearly round and oval varieties. There are slight variations in size, but overall, most walnuts are of a moderate size and more uniform in size. The shell surface features a dark or light texture, akin to a natural grain pattern, endowing the walnut with a distinctive appearance. The texture is relatively hard, offering optimal protection for the inner kernel.

Kernel characteristics
Kernel fullness: Yunnan walnuts are notable for their fuller kernels, which are often complete and thick after peeling. This reflects the favourable conditions for growth and development, as well as the excellent taste and rich nutritional value that have contributed to the walnuts' success in the market.
Please be advised that we are experiencing an issue with black walnut kernels. There are a number of reasons why black walnut kernels are present in Yunnan walnuts. Some local varieties have a naturally darker seed coat colour, which may appear black or dark brown. This is not a defect and the black walnut kernels usually still have normal taste and nutritional value. By way of illustration, some strains of Yangbi walnuts exhibit a darker colouration. Additionally, as with other walnut varieties, oxidation can also cause the walnuts to turn black. Due to the relatively humid climate in Yunnan, if walnut kernels are not properly preserved, they are exposed to air for a long time, which causes oxidation of the phenolic substances, resulting in a gradual deepening of the kernel colour into black. Furthermore, if the walnuts are stored in a humid environment or if mould is present during growth, the kernels will also turn black. This is accompanied by a mouldy smell and visible mould spots. Such walnuts are not suitable for consumption.
Taste and flavour profile
The taste is mellow. Yunnan walnut kernels have a distinctive mellow taste and texture, offering a satisfying chew with a hint of toughness. While there may be slight variations in taste between different varieties of walnuts, they all offer a rich, nutty flavour experience.
