The average protein content of Xinjiang's main walnuts is 19.35%, and the average fat content is 60.91%. The amino acid variety is complete and the total content is high. The essential amino acid content accounts for 27% to 30% of the total amino acid content, and the SRC is between 68.85 and 78.40. The first limiting amino acid of walnut protein is lysine.
